Green tea is dry roasted or steamed shortly after picking, this prevents oxidation, thus preserving the natural freshness and colour of the leaves. Green tea generally has a light, fresh feeling in the mouth and can have aromas of grass, hay and seaweed, Roasted green tea will have strong coffee, chocolate, roasted smells, and is more mild, with very little bitterness or astringency.

Green tea, especially Japanese green tea has a mellow, long sustained caffeine high, plenty of anti-oxidants and can be good for digestion.
